Proper Bacon from A Smallgood

Region of origin: a small, family-run salumeria in mid-coast Maine.

Type of meat: pork - special pork raised with the highest standards, which include nutritious diet without antibiotics, animals raised with shelter, resting areas, sufficient space, and the ability to engage in natural behaviors.

Delicious details: cured with rosemary and Maine maple syrup.

Flavor: salty, with a hint of sweetness.

Perfect Pairings: I mean, eggs. If you’re local, get the beautiful and delicious fresh blue ones from Dan Madura Jr. Farm at the Nyack Farmers Market. Grate on some Imperial Buck Cheddar which is creamy enough to balance the salt.

Scott’s favorite thing about Proper Bacon: Joe and I fried up a package of this one Sunday morning and were blown away! It actually tastes like pork and not that smoky faux diner bacon flavor we’ve all become accustomed to. It’s for sure a special occasion bacon to be enjoyed simply.
