Scott’s Paloma
Using a grapefruit soda means you don’t have to also use simple syrup.
1/4 cup blanco tequila - 100% agave is important
1 tbsp fresh squeezed lime juice
1/4 cup fresh squeezed grapefruit juice
1/4 cup grapefruit soda - I like FeverTree
good salt
grapefruit wedge
ice
Cut a lime in half and run it around the edge of your glass. Dip the edge of the glass in the good salt (I don’t even bother to put it on a plate, just dip in in the bowl of salt next to the stove).
Fill a shaker with ice and then add the tequila, lime juice, and grapefruit juice. Shake it up, buttercup.
Fill your salted glass with fresh ice, then strain the cocktail over. Top with the grapefruit soda and add your slice of grapefruit down the inside of the glass. Or stick it on the rim with a tiny umbrella - I don’t care - do you.
